Tandoori

This is a beautiful dish the whole family will love. I like to serve it with basmati rice and a fresh cucumber and tomato salad. If your chicken isn’t bright red like you’re expecting it to be, the colour is normally created by adding red food dye. Salivate! Blends are all natural so I don’t add it to the mix. Don’t worry, it will still taste amazing!

INGREDIENTS

4 chicken marylands

250ml natural yoghurt, drained.

2tbsp Salivate! Tandoori Blend

1 lemon, zest and juice

1/2 knob ginger, grated

4 cloves garlic, chopped

4 red chillies, chopped - I leave them out if I’m cooking for kids

1/2 cup vinegar

METHOD

  • Place the ginger, garlic, spice blend, vinegar, chillis - if you’re using them in a food processor and pulse until it reaches a smooth paste consistency

  • In a mixing bowl combine the yoghurt, tandoori paste and lemon juice.

  • Mix into a smooth paste, add the chicken pieces and marinate for a minimum of 2-3 hours or overnight if possible.

  • Place marinated chicken on to a greased baking tray and cook in an oven set at 180C for 25-30 minutes or until cooked.
