Chicken with Chilli Jam

 

serves 4

ingredients

  • 2 tbsp oyster sauce

  • 2 tsp fish sauce

  • ¼ cup coconut milk

  • ½ tsp sugar

  • 2 tbsp vegetable oil

  • 6 cloves garlic finely chopped

  • 500gm chicken breast finely sliced

  • 1-1 ½ tbsp chilli jam - get the recipe here

For garnish: 1 long red chilli seeded and finely sliced and sweet or holy basil leaves


method

  • Mix the oyster sauce, fish sauce, coconut milk and sugar in a bowl

  • Heat the oil in the wok or frying pan and stir fry half the garlic until light brown

  • Add the chilli jam and stir fry until fragrant

  • Add half the chicken and stir on high heat for 2 - 3 minutes

  • Remove from the wok and repeat with remaining garlic, jam and chicken

  • Return all chicken to the wok

  • Add the fish sauce mixture and stir fry until chicken is cooked through

  • Stir in basil leaves and garnish with the chilli
