Chicken with Chilli Jam

ingredients

2 tbsp oyster sauce
-
2 tsp fish sauce

¼ cup coconut milk
-
½ tsp sugar

2 tbsp vegetable oil

6 cloves garlic finely chopped

500gm chicken breast finely sliced

1-1 ½ tbsp chilli jam - get the recipe here
For garnish: 1 long red chilli seeded and finely sliced and sweet or holy basil leaves
method

Mix the oyster sauce, fish sauce, coconut milk and sugar in a bowl

Heat the oil in the wok or frying pan and stir fry half the garlic until light brown

Add the chilli jam and stir fry until fragrant

Add half the chicken and stir on high heat for 2 - 3 minutes

Remove from the wok and repeat with remaining garlic, jam and chicken

Return all chicken to the wok

Add the fish sauce mixture and stir fry until chicken is cooked through

Stir in basil leaves and garnish with the chilli
