Black Sticky Rice Pudding

 

4 - 6 serves

ingredients

  • 2 cups black glutinous rice soaked overnight

  • 1.25 litres water

  • 2 cups sugar

  • sweet coconut cream

  • 250 ml coconut cream

  • 2  tsp rice flour

  • ½ tsp salt

  • pinch sugar

  • caramelised coconut

  • 2 cups freshly grated coconut or dried shredded

  • 1 cup brown sugar


method

  • Rinse the rice and place in a saucepan with the water. Bring to the boil and cool until the grains are soft and split and most of the water has been absorbed

  • Add the sugar and cook until dissolved

  • Meanwhile combine the ingredients for the coconut cream into a saucepan and bring gently to the boil then remove from the heat. The rice flour should thicken the cream

  • To make the caramelised coconut put the coconut and sugar into a saucepan with a little water and stir constantly over a medium heat until thick

  • Spoon the rice into bowls and top with the coconut cream and the caramelised coconut

You could add some banana to the top if you like
