Black Sticky Rice Pudding
4 - 6 serves
ingredients

2 cups black glutinous rice soaked overnight

1.25 litres water

2 cups sugar

sweet coconut cream
-
250 ml coconut cream

2 tsp rice flour
-
½ tsp salt
-
pinch sugar

caramelised coconut
-
2 cups freshly grated coconut or dried shredded

1 cup brown sugar
method

Rinse the rice and place in a saucepan with the water. Bring to the boil and cool until the grains are soft and split and most of the water has been absorbed

Add the sugar and cook until dissolved

Meanwhile combine the ingredients for the coconut cream into a saucepan and bring gently to the boil then remove from the heat. The rice flour should thicken the cream

To make the caramelised coconut put the coconut and sugar into a saucepan with a little water and stir constantly over a medium heat until thick

Spoon the rice into bowls and top with the coconut cream and the caramelised coconut
You could add some banana to the top if you like
