This refreshing and delicious salad is great served with pita and a Mediterranean or Middle Eastern style grill. I use quinoa as, not only is it Gluten Free it’s tastes amazing.

serves 6

ingredients

  • 1 cup quinoa

  • 1 clove garlic minced (optional)

  • 1 - 2 lebanese cucumber

  • 8 cherry tomatoes

  • 1 bunch flat leaf parsley

  • 4 spring onions

  • ¼ cup mint leaves

  • juice of one lemon - to taste

  • sea salt

  • Extra Virgin Olive oil method

  • Bring the quinoa to the boil and then turn down to simmer for about 10 minutes, drain and set aside. The quinoa is ready when they have little ‘tails’

  • Halve the tomatoes, chop the cucumber into cubes, thinly slice the spring onions and chop the parsley and mint

  • Place drained quinoa in a bowl and add the salad ingredients plus the garlic

  • Dress with lemon juice and olive oil. Remember to add lemon juice a bit at a time and taste and then adjust.

  • Season to your taste
