Squid, Fennel and Mint

I love this plate of gorgeousness. I tend to buy local squid and clean it myself, however if you’re not that way inclined just go for squid tubes. You can get them from the seafood store or even the supermarket.

Ingredients

  • 6 Squid tubes

  • 4 tbsp fennel seeds

  • big bunch of fresh mint

  • 2 long fresh red chillies or chilli flakes

  • 2 limes

  • Olive oil

  • sea salt flakes to taste

 Method

  • Grab two large knives. Place one of the knives up into the squid tube and then with the other knife cut diagonally into the tube. Turn over and do the other side. This way your squid tube is intact but with slits on both sides.

  • Heat the BBQ to hot and add the fennel seeds on a dry plate to release the flavour. Remove from the BBQ and set aside.

  • Now splash some oil over the plate, make sure it’s really hot and then add the squid. The squid needs to get brown and this should take no more than a couple of minutes each side. You don’t want to cook it too long or it will be a tough as old boots!

  • Just before you take them off the heat, squeeze some lime juice over them

  • Place them on the serving plate, scatter the fennel seeds, sea salt, chilli and mint over the top. Add some more lime cheeks and you’re good to go.
