Stephanie’s Potato Salad

This is my sister’s salad, which I love and ask for every time I go to her house. It’s great with a BBQ or some roast chicken.

 INGREDIENTS

  • 500gm Baby chat potatoes

  • 1 red onion finely sliced lengthways

  • 1 bunch fresh dill

  • 2 boiled eggs

  • 1tbs cornichons finely chopped

  • 1tbs capers finely chopped

  • chives finely chopped

  • Mayonnaise

  • Sour Cream

  • Salt and Pepper

method

  • Make the basic Mayo recipe - here’s the recipe - and add 1tsp seeded mustard and 1tsp hot English mustard at the beginning with the Dijon

  • Boil potatoes whole in salted water with skin on until tender (al dente).

  • Meanwhile mix ½ the mayo with equal amount of sour cream and then add the rest of the ingredients. Taste the balance - add a little more mayo or sour cream as you like.

  • Drain the potatoes an chop them to the size you like and place in the bowl with the dressing bowl

  • Mix together and season with salt and pepper to taste.

Once again, this is all about taste. Play around until you get the balance you like.
