Stephanie’s Potato Salad
This is my sister’s salad, which I love and ask for every time I go to her house. It’s great with a BBQ or some roast chicken.
INGREDIENTS
500gm Baby chat potatoes
1 red onion finely sliced lengthways
1 bunch fresh dill
2 boiled eggs
1tbs cornichons finely chopped
1tbs capers finely chopped
chives finely chopped
Mayonnaise
Sour Cream
Salt and Pepper
method
Make the basic Mayo recipe - here’s the recipe - and add 1tsp seeded mustard and 1tsp hot English mustard at the beginning with the Dijon
Boil potatoes whole in salted water with skin on until tender (al dente).
Meanwhile mix ½ the mayo with equal amount of sour cream and then add the rest of the ingredients. Taste the balance - add a little more mayo or sour cream as you like.
Drain the potatoes an chop them to the size you like and place in the bowl with the dressing bowl
Mix together and season with salt and pepper to taste.
Once again, this is all about taste. Play around until you get the balance you like.
