Pork with Snake Beans

 

 serves 4

ingredients

  • 1 tbsp oyster sauce

  • 1 tbsp light soya sauce or tamari

  • ¼ tsp sugar

  • 2 tbsp vegetable oil

  • 4 cloves garlic finely chopped

  • 350gm pork fillet finely sliced

  • 250gm snake beans cut into 5cm lengths

For garnish: 1 long red chilli seeded and finely sliced and sweet basil leaves


method

  • Mix the oyster sauce, soy and sugar with 2 tablespoons of water in a bowl

  • Heat the oil in the wok or frying pan and stir fry the garlic until light brown

  • Add the pork fillet and stir fry over high heat until cooked

  • Add the beans and the sauce and stir fry for a few minutes

  • Adjust seasoning add garnish and serve

Note:  you could add sliced eschallots and cherry tomatoes to this dish for added depth
