Moroccan Flavoured Lamb Kebabs
ingredients

6 - 8 lamb steaks depending on size

1tsp ground coriander

1tsp ground cumin
-
1tsp paprika
-
shake chilli flakes
-
2 cloves garlic finely chopped
-
salt and pepper to taste

1 lemon
-
12 skewers
-
extra virgin olive oil
-
1 cup greek yoghurt
-
small handful fresh mint
method
-
Cut the lamb into cubes
-
Dry fry the spices until fragrant and the add to the lamb with a squeeze of lemon, salt and olive oil and give a good massage. Set aside

Chop the mint and add to the yoghurt, season with black pepper

Skewer the lamb pieces 4 -5 pieces per skewer

Heat Frypan or BBQ to hot, add a little oil and place pitta into the frypan. Brown on both sides and drain on paper towels, then chop into pieces

Now fry the lamb skewers in batches if necessary, Add a squeeze of lemon at the end of the cooking process

Serve with Tabbouleh, yoghurt and pitta
