Green Beans with Oyster Mushrooms
This recipe is a combination of so many ingredients I love - green beans, one of my favourite vegetables (read all about that here) - oyster mushrooms have such an incredible texture and taste - combined with oyster sauce (the Ayam brand is gluten free) and soy/tamari - this is a taste sensation. Eat it as a main with rice or pair it with a meat dish on the table to share. Either way this dish is delicious, fast and easy.

INGREDIENTS

2 - 3 cloves garlic thinly sliced

100gm oyster mushrooms torn in half

200gm green beans trimmed and cut into 5 cm lengths

1 tbsp oyster sauce

2 tsp light soy or tamari

2 tsp sugar
-
1 tsp sesame oil

½ tsp ground white pepper

1 tbsp vegetable oil

coriander leaves as garnish
METHOD

Heat frying pan or wok over high heat, add oil and flash fry garlic until fragrant

Add beans and stir fry for 2 minutes, then add mushrooms and the rest of the ingredients

Toss for a further minute and the transfer to a serving plate and garnish with the coriander leaves.
