Green Beans with Oyster Mushrooms

This recipe is a combination of so many ingredients I love - green beans, one of my favourite vegetables (read all about that here) - oyster mushrooms have such an incredible texture and taste - combined with oyster sauce (the Ayam brand is gluten free) and soy/tamari - this is a taste sensation. Eat it as a main with rice or pair it with a meat dish on the table to share. Either way this dish is delicious, fast and easy.

serves 4 - 6

INGREDIENTS

  • 2 - 3 cloves garlic thinly sliced

  • 100gm oyster mushrooms torn in half

  • 200gm green beans trimmed and cut into 5 cm lengths 

  • 1 tbsp oyster sauce

  • 2 tsp light soy or tamari

  • 2 tsp sugar

  • 1 tsp sesame oil

  • ½ tsp ground white pepper

  • 1 tbsp vegetable oil

  • coriander leaves as garnish


METHOD

  • Heat frying pan or wok over high heat, add oil and flash fry garlic until fragrant

  • Add beans and stir fry for 2 minutes, then add mushrooms and the rest of the ingredients

  • Toss for a further minute and the transfer to a serving plate and garnish with the coriander leaves.
